Jumbo Raisin Cookies
There’s nothing quite like a freshly-baked cookie straight off the cooling rack which is why we’re sharing our most highly requested recipe. Among the most popular of cookies, this is a definite crowd pleaser!
2 cups Jumbo Thompson Raisins
1 cup water
1 cup margarine
2 cups white sugar
3 eggs
1 tsp. vanilla
4 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1 tsp allspice
Boil raisins and water for 5 minutes. Set aside. Do not drain.
Cream margarine, sugar, eggs, and vanilla. Add raisins and juice from raisins. Add remaining ingredients. Mix together.
Drop from teaspoon onto greased baking sheet. Bake 12 to 15 minutes at 375 F. Makes 5 dozen cookies.
